I am going to share the secret that is
responsible for making a pancake airy, light,
jiggly and so soft that it can easily soak up the
maple syrups and other toppings. So are you
ready? Come, lets start.

The ultimate secret for Japanese fluffy
pancake is the way you whip your eggs. Yes, it is
the eggs that play the most vital role! Never
ever whip the egg whites and the yolk together.

Put both the ingredients in two separate bowls
and then beat the egg whites exclusively for 3
4 minutes, until it turns into a thick, frothy
white consistency.

Once done, keep it aside. In another bowl, mix
the yolks and the other dry ingredients together
to form a smooth batter.

Take care not to over mix. Allow it to rest for
15 30 minutes, so that all the ingredients soak
in well.

Then right before cooking, slowly fold in the
whipped egg whites into the batter. Mix them in a
manner that some of the egg whites can still be
seen.

Always remember, adding the frothy egg whites
into the batter should be the last step.

I understand, this seems like a bit of extra
work, but to assure a fluffy Japanese pancake,
this is the undeniable trick.

Another point to be noted is, make sure to use
fresh baking powder. By which I mean, if your
baking powder is opened for more than six months,

it wont be an effective ingredient for your
pancake. The reason baking powder is used,
because it helps the pancake to rise.

be time to pour the batter in molds that are
place on a warm non-sticky skillet.

While cooking, dont rush to flip the pancakes.
If you want them to resemble the Japanese fluffy
pancakes, then wait until the bubbles are formed
in middle of the pancakes.

Once hole shaped small bubbles are formed, flip
it over, but only once. You should never flip
your pancake over and over again.

Although the latter two tricks look like not
absolutely necessary, they do play a part in
making the pancake soft and airy.

the perfectly fluffy Japanese pancake, whenever I
