1. Use of Cake Flour
Although all-purpose flour is used to prepare a
pancake, preparing a soufflé pancake from cake
flour will show delighting results.

Cake flour is delicate and finely milled, making
it the perfect ingredient for higher rise and
tender crumb.

2. Cold Egg Whites
In order to assure an airy texture and also to
maintain that airiness when they are folded into
the batter, it is essential to whip egg whites
that are cold and not at room temperature.

Simply whipping the egg whites separately from
the yolk is not the only game. It is also
important to note how you whipped.
