  • TORNADO
  • Rapid Pre-cooling System for fresh crops
  • All fresh horticultural crops are living
    organisms, even after the
  • harvest and they remain alive until they are
    consumed.
  • The necessary energy to continue this cycle of
    life is called
  • respiration.
  • During this phase the product produces heat
    raising the
  • temperature and priming all the events of aging
    of the product.
  • The research confirms that lowering the
    respiration rate, as
  • fast as possible, after harvest, is essential to
    preserve the
  • quality of the fresh products.
  • A proper precooling preserves product quality by
    inhibiting
  • the growth of decay producing microorganisms,
    restricting
  • enzymatic and respiratory activity, inhibiting
    water loss, and
  • reducing ethylene production (Hardenburg et al.
    1986)

  • The System is designed to control the temperature
    with a difference
  • 0,5C between the pulp temperature and air one.
  • If compared to the other systems the
    "Hidrocooling" or the Vacum", the Forced
  • Air cooling is one of the most economic methods
    that quickly remove the field
  • heat.

Where is placed The System "M-FAC1" is used
inside The most common cold rooms, with extreme
simplicity. What it does A powerful fan
pulls the cold air from the cold room crossing
the product, allowing to get a perfect cooling
in rapid times - 1/3 in comparison to the common
cold rooms where the product is simply positioned
and slowly and not uniformly cooled, through a
light contact with cold air.

  • Description of the Process
  • 1. Placing the product and the machine
  • The product, prepared on palletts or bins, is
    placed on two parallel
  • rows distant around 50 cm from each other. A
    corridor forms
  • among
  • the two rows of palletts disposed as mentioned
    above, as long as
  • the length of the rows.
  • The machine is positioned to one of the two
    extremities of the
  • "corridor", leaning it to the palletts, leaving
    the mouth of
  • aspiration
  • at the center of the corridor.
  • At the top of the machine is placed a tarp that
    will be unrolled on
  • the palletts for the whole length of the
    corridor, so to create a
  • tunnel.
  • This operation will take a couple of minutes.
  • The machine is ready to work.

  • 2. Working
  • A centrifugal elettro-fan, calibrated to the
    dimension of the cold room and
  • to the palletts of product to be treated, is
    assembled inside of each unit.
  • Turned on the fan the cold air is pulled by the
    environment, crossing the
  • product placed on the palletts or bins and
    reaching the corridor.
  • Rapid and uniform cooling results, from the
    forced-convective contact of
  • the high-speed, refrigerated air with the warm
    produce.
  • As told before, the pulp-probe inserted inside
    the product, will constantly
  • control the variation of temperature, and when
    the pulp reaches the setted
  • temperature, the fan will stop restarting as soon
    as the temperature will
  • rise again.
  • This is an absolute innovation!
  • This cooling phase happens with a very rapid
    time, around 3 hours
  • against the common cold rooms that would employ
    at least 9
  • hours.

  • Highly perishable products.
  • The cooling of the products through Forced Air is
    an easy application
  • extensible to varied fresh horticultural crops.
    Nevertheless, some products
  • have an higher intensity of respiration after
    harvest and, consequently, a
  • notable water loss.
  • In the following chart some typologies of
    products are exemplified
  • Note Times changes beeing in relation to the
    entry temperature of the product, to the kind of
    pakging, to
  • the cold plant and to other things.
  • Preserving the Quality and reducing the scart
    during the
  • marketing of fresh crops.
  • To prevent the cooling stress and curb an ample
    range of fisio-pathological
  • alterations during the refrigeration, is
    advisable effect a rapid pre-cooling
  • for some perishable products, so to increase the
    resistance to infections and
  • to decrease the intensity of respiration and
    transpiration
