Panjiri Items
  • Desiccated coconut flour- 3/4 cup
  • Coriander seeds- 1 cup
  • Melon seeds- 5 tsp
  • Coconut ghee- 7 tbsp
  • Lotus seeds- 1 cup
  • Almonds, diced and roasted- 3 tbsp
  • Cardamom-  3 1/2 tsp
  • Stevia 6-8 drops

Panjiri Recipe
  • On a low burner, dry roast the coconut flour
    until it gets a deep golden colour.
  • Add the cardamom pods, coriander seeds, and
    coconut ghee, and roast everything until the ghee
    is absorbed by the flour and the flavour of the
    spices is released.
  • Add the lotus seeds, shelled melon seeds, and
    diced, toasted almonds at this point, and stir
    the mixture until everything is evenly roasted.
  • Add the stevia last, then extinguish the flame.
  • It's time for your Panjiri Prasad!
