• Nutrition assessment and therapy from an
  integrative medicine perspective
• CAM nutrition intervention integrating food as
  medicine and the use of nutraceuticals with
  botanical medicines for food allergies,
  maldigestion, and chronic diseases
• Therapeutic menus using a whole foods and
  food-as-medicine approach
• The advantages of being an alert, involved,
  informed community consumer food and nutrition
  advocate.

• The Nutrition Assessment Process, Debra Boutin,
  MS, RD, CD
• Students will
• Perform a personal nutrition assessment,
  including a computer nutrient analysis of one's
  own diet diary.
• Evaluate the effectiveness of current public
  education models, including the new Food Guide
  Pyramids.
• Recognize how food sensitivities contribute to a
  patient's physical and emotional health, and
  demonstrate the role of an elimination diet in
  assessment.
