• Crack eggs into a bowl and whip with a wire
  whisk.

Place the pan on the burner on high heat. When
the pan is hot, add clarified butter and swirl it
to coat the entire inside of the pan.

• Pour beaten eggs into the hot pan. Allow them to
  coagulate briefly and then stir. Allow the
  uncooked portion to run underneath the cooked
  portion.

  filling and fold the omelet neatly. Cook the
  omelet until it is lightly firm.
