One of Queen Victoria's
ladies-in-waiting, the Duchess of Bedford, is
credited as the creator of afternoon teatime.
Because the afternoon meal had become smaller,
the Duchess suffered from "a drooping feeling" in
her stomach at about four in the afternoon. At
first she had her servants sneak her a pot of tea
and a few rolls. Adopting the European tea
service format, she invited friends to join her
for an additional afternoon meal at five o'clock
in her rooms at Belvoir Castle.

- The menu centered around small cakes, bread and
butter sandwiches, assorted sweets, and, of
course, tea. This summer practice proved so
popular, the Duchess continued it when she
returned to London, sending cards to her friends
asking them to join her for "tea and a walk." The
practice of inviting friends to come for tea in
the afternoon was quickly picked up by other
social hostesses. -
6Etiquette
- Pick up your tea cup and saucer together -
holding the saucer in one hand and the cup in the
other - Your pinky does not have to be extended, but you
can if you think you need to. - Make sure you hold your saucer under your tea cup
when drinking - Only sip slowly when drinking
- Do not make clinking noises when stirring with
your spoon - Never sip your tea from your spoon

- After stirring, place your spoon quietly on the
saucer, behind the cup, on the right hand side
under the handle - Milk should be served with your tea, not
cream-cream is too heavy and masks the taste of
your tea - If serving lemons with your tea, use slices, not
wedges - Never add lemon with your milk because of the
citric acid lemons have, it will cause the milk
to curdle

- SODA BREAD
- . 500g whole wheat flour1 tsp baking soda1 tsp
salt450ml (3/4 pints) of buttermilk (
approximately) - put the flour, baking soda and salt in a large
bowl and mix together - add enough buttermilk to mix to a soft dough
- knead dough very lightly
- shape into a large round and place on a floured
baking sheet - cut a deep cross in the top
- bake at 200 C / 400 F / Gas 6 and bake for 40
minutes, until the loaf sounds hollow when tapped
on the bottom - eat while still warm.
9RECI-TEA
BUTTERMILK SCONES
8oz ( 225g ) all purpose ( plain) flour and 4
level teaspoons of baking powder1oz ( 25 g )
caster sugar1/2 tsp salt2oz ( 50 g ) unsalted
cold butter1/4 pint ( 150 ml ) buttermilk sift
the flour, baking powder and salt into a bowl
rub in the butter until the mixture resembles
breadcrumbs add the buttermilk and mix together
with a knife into a soft dough roll out dough
until 1/2 inch ( 1 cm ) thick on a floured
surface cut into 2 1/2 inch ( 6.5 cm ) rounds
with a biscuit cutter or glass place on to a
greased baking tray and brush the scones withÂ
buttermilk bake in oven at 450 F ( 230 C/ Gas 8
) for 8-10 minutes until golden brown when
cooled serve with strawberry jam and thick cream
