  • Ingredients
  • 4 large flour tortillas
  • 1 ½ cups shredded cheese (Cheddar, Monterey Jack,
    or a mix)
  • 1 cup cooked black beans, rinsed and drained
  • 1 medium tomato, diced
  • ¼ cup finely chopped onions
  • ¼ cup diced bell peppers (any color)
  • 1 tbsp fresh cilantro, chopped
  • Salt and pepper, to taste
  • 1 tbsp olive oil or butter (for cooking)
  • Salsa and guacamole, for serving

Instructions 1. Prepare the Skillet Heat a
large skillet over medium heat. Add a small
amount of olive oil or butter and let it melt,
coating the pan evenly.

  • Assemble the Quesadilla
  • Place one tortilla in the skillet. On one half of
    the tortilla, sprinkle a generous layer of
    shredded cheese.
  • Add the Filling
  • Layer on the black beans, diced tomatoes, onions,
    bell peppers, and cilantro over the cheese.
    Season with a pinch of salt and pepper to taste.
  • Top with More Cheese
  • Add another layer of cheese on top of the filling

  • Fold and Cook

  • Remove and Slice
  • Remove the quesadilla from the skillet and let it
    cool for a minute. Cut into wedges for easy
    serving.
