What is Gluten?
  • Gluten is a protein naturally found in grains
    like wheat, barley, spelt and rye.
  • Gluten is often found in wheat and foods
    containing wheat.
  •  Its a sticky protein acting as a binder,
    holding dough together.
  • Without gluten, the dough would not be sticky and
    can rip easily.

Gluten affecting health
  • Gluten will cause problems like abdominal pain,
    diarrhea, bloating, excessive wind, tiredness and
    general aches and pains.
  • The above diseases are also symptoms for celiac
    disease.
  • Celiac disease is a disorder in which eating
    gluten causes inflammation and damage to the
    small intestine.

what is Gluten free diet?
  • Avoiding foods containing gluten is called Gluten
    free diet. For example food products made up of
    wheat, barley, rye.
  • Consuming gluten-free foods in their whole form
    is beneficial in gluten free diet.
  • But foods with gluten are also rich in fiber,
    vitamins B, magnesium, and iron, so its
    important to make up for these missing nutrients
    also.

    unprocessed forms.
  • Eggs ,fish and poultry.
  • Most low-fat dairy products.
  • Packaged foods made up of Millet (Ragi and
    Bajra), Jowar (Sorghum).
  • Quinoa.

  • Avoid all foods containing the following
  • Wheat, barley, rye
  • Oats
  • Also avoid food products like
  • Beer, stout, ale, porter (usually barley)
  • Breads, Pastas, Hot dogs
  • Burger
  • Cakes and pies

  • An individual thinking of gluten free diet should
    take some steps to prepare.
  • Firstly, consult the doctor for any
    gastro-intestinal symptoms, such as chronic or
    severe abdominal pain, bloating, or diarrhea.
  • Talk to a dietitian before cutting out gluten, to
    make sure the diet will include all the essential
    nutrients.
  • Initially you can start with gluten reduced diet
    and then continue with gluten free diet.
