What I Have Learned
  • I have learned about presentation and timing
  • It is best to be prepared when putting functions
  • Mise en place is very important, it saves time
    instead of running around trying to find your
    ingredients
  • Enjoy yourself- great food happens when you least
    expect

Fun stuff
  • I got to go to the Velvet Revolver and to gold
    medal game for Team Canada Juniors
  • I got to watch Walking With The Dinosaurs.
  • I attended the Food and Wine Show.
  • Once a week, our crew got to play find the smell
    in the fridge. It is a fun game for the whole
    family.

The Clientele
  • MTS caters to many different functions.
  • They offer on-site catering for movies shoots.
  • We also provide food for the road crew as well as
    back stage food for the artist.
  • Kanye West, Ozzie Osborne, Beyonce and Korn are a
    few of the stars that I got to cook for.
  • We provide meals for the Manitoba Moose and the
    Winnipeg Blue Bombers, as well as the away team.
  • MTS hosted a tasting for the season ticket
    holders for over 1000 people.
  • Private suites can order food for the hockey game
    and concerts as well.

Food Can Be Beautiful
  • I prepared crudites, fruit platters, Brownie
    platters and salads.
  • I made sandwich platters and burger garnish
    platter.
  • I arranged dainty platter for private functions
    and banquets.

The Equipment and Other Cool Toys
  • I had fun using different types of equipment
  • The 2 fridges and 2 freezers were massive.
  • The Hobart mixer saved my life when we had to
    make bannock for over 1000 people.

My responsibilities
  • I made bannock for over 1000 people. I taught
    students from Winnipeg Technical College how to
    as well.
  • I taught new staff members how to make sushi,
    garnishes, dainty platters.
  • At the end of my term I was able to put my own
    functions together for 100 people.
