  • In this WebQuest, you will step into the shoes
    of a nutritionist. You will be assigned a client
    in need of diet expertise. Use the websites and
    resources provided throughout the quest (they are
    hyperlinked) to give your client everything they
    need to begin a new, healthier lifestyle.

Initial Assessment
  • Before you can do anything else for your
    client, you need to know how healthy or unhealthy
    they are now. You also need to be able to
    explain it to them. First, learn a little bit
    about Body Mass Index and what risks are linked
    with being overweight, obese, or underweight.
    Next, determine your clients BMI and explain to
    them their specific risks. Use the calculator to
    determine a goal weight for your patient. (At
    what weight would a person of their height be at
    a normal body mass index?) Next, set a realistic
    time frame for the weight loss. Keep in mind
    that no one should lose more than 2 lbs. a week.
    Also, it is likely that your client may lose
    weight faster at the beginning than toward end.

  • Now that you have a goal weight determined, use
    MyPyramid to find some basic eating guidelines
    for your client. Find out your clients specific
    calorie needs (calorie pattern) and how many
    servings they should get from each food group.
  • Not only does your client need to eat specific
    servings within the food groups, they also need
    to choose healthy foods from each group. Use the
    Dietary Guidelines for Americans to give your
    client some helpful information on making
    nutrition-savvy choices. Be sure to explain what
    they should look for in foods as well as what
    they should avoid.

Healthy Cooking
  • Your client now has the information needed to
    choose healthy foods within the different food
    groups. But when it comes to preparing those
    foods, they are still in the dark. Help your
    client out with some health conscious cooking
    techniques. Also, include some advice on
    substituting ingredients to make meals healthier.
  • Even with these helpful tips, putting together
    3 healthy meals a day can be a challenge. Help
    your client out by creating a 3 day meal plan.
    In addition to coming up with menu items
    (breakfast, lunch, snack, and dinner), include
    one main dish recipe for each day. Make sure the
    recipe includes healthy ingredients and uses
    healthy cooking techniques. Be sure to explain
    to your client why you chose the recipe you did.

Dining Out
  • Aside from favorite comfort foods, eating on
    the run at fast food restaurants can also be very
    hazardous to your clients healthy eating habits.
    Before giving your client any fast food advice,
    determine what you know about the subject.
  • Combining what you already know about healthy
    eating with what you just learned about fast
    food, help your client eat a little healthier on
    the run. Research the two restaurants listed
    near where your client lives. Either use the
    food database provided, or search the official
    restaurant website. Each restaurant should
    provide nutrition information for their menu
    items.
  • From the restaurant menus, select 2 dinners
    your client could eat guilt free. Make sure
    these meals fit well into MyPyramid and the
    Dietary Guidelines for Americans. Give your
    client a clear explanation of your choices so
    they will be able to make healthy decisions at
    different restaurants as well.

Put it All Together
  • By now you have collected a lot of information
    for your client. Before you hand it over to be
    put to the test, do some final revisions. First,
    make sure you have included all the information
    your client needs and that the information is
    correct.
  • Next, be sure that this information fits your
    client. Remember, each person is different and
    has different nutritional needs. You should have
    set a weight goal that is tailored to your
    individual client. You should have taken into
    account your clients food preferences. If they
    hate the healthy food you selected for them, odds
    are theyll pick unhealthy foods on their own.
  • Finally, make sure the information is presented
    to your client neatly in a way that is easy to
    read and understand.

Modifying Recipes
  • Your client now has a good idea of what to eat
    and how to prepare it in a healthy way. But,
    just like all of us, he/she still has that one
    favorite, though unhealthy, food they are
    unwilling to give up. Its your job to make sure
    this weakness isnt the end of their new healthy
    habits.
  • Start by finding an original (unhealthy) recipe
    of your clients favorite food (include a copy).
    Next use the healthy cooking techniques and
    substitution tricks you learned earlier to modify
    the recipe. Provide your client with a healthier
    version recipe of their favorite treat. Be sure
    to explain the changes you made so that your
    client can easily follow your lead in modifying
    recipes on their own in the future.
