Yoghurt bacteria

• Some bacteria will turn milk into yoghurt.
• They feed on the sugar in milk, multiply and
  produce acid.
• The acid thickens the milk and makes it taste
  slightly sour.
• The acid also stops other bacteria growing, so it
  preserves the yoghurt.

Making yoghurt at home

• Wash hands and equipment with hot, soapy water.
• Boil and cool milk to kill harmful bacteria
• Put teaspoon of natural yoghurt into pot, two
  thirds fill with milk, stir.
• Cover and leave in a warm place overnight.
• Add fruit or jam to taste and keep refrigerated.
