What is Quinoa? 
Most people call quinoa (pronounced "keen-whah")
a grain, but it's actually a seed one that
originated thousands of years ago in the Andes
Mountains. Dubbed "the gold of the Incas," it's
treasured because of its nutritive value (more
protein than any other grain or seed!).
Where does my quinoa come from?
Origin and history. Quinoa is an Andean plant
which originated in the area surrounding Lake
Titicaca in Peru and Bolivia. Quinoa was
cultivated and used by pre-Columbian
civilizations and was replaced by cereals on the
arrival of the Spanish, despite being a local
staple food at the time.

How many types of Quinoa are there? There
are roughly 120 known varieties of quinoa,
according to the Whole Grains Council. The most
commercialized types are white, red and black
quinoa. White quinoa is the most widely-available
in stores. Red quinoa is more often used in meals
like salads since it tends to hold its shape
better after cooking. Black quinoa has an
earthier and sweeter taste. You can also
find quinoa flakes and flour.

Quinoa Nutrient profile "Quinoa is a great

means that one serving provides at least 20
percent of the daily value of that nutrient."

Quinoa Benefits
A complete protein "Quinoa is most famous for
being one of the only plant foods that supplies
complete proteins, offering all essential amino
acids in a healthy balance," Toups told Live
Science. Anti-inflammatory benefits Quinoa and
other whole grains may help decrease the risk of
this dangerous inflammation, according to Toups.
They "help promote healthy gut microbes (the
friendly bacteria in the gut), which is important
for preventing obesity, inflammation and
disease."  Gluten free Gluten-free diets are
recommended for people with Celiac disease, a
severe gluten intolerance. "Because quinoa is
naturally gluten-free, this nutritionally dense
grain is the perfect pick for gluten-free diets,"
said Toups. Digestion One cup of cooked quinoa
contains 21 percent of the recommended daily
intake of fiber, which is great news for your
gut.
