Why do we cook food in oils?

How do they make olive oil into a spread?
  • Double bonds stop the molecules fitting together
    very well.
  • If hydrogen is added some of the double bonds
    become single bonds.
  • A temperature of 60c and a nickel catalyst is
    needed.
  • The molecules fit together better.

  • The size of the forces between the molecules
    increases.
  • This raises the melting point.
  • Thus the oil becomes a solid at room temperature.
  • This is called hardening.
  • The solid oil is called a hydrogenated oil.
