14
OUTCOMES FROM THE SCIENTIFIC AND TECHNICAL
COMMISSION MEETING
  • 4. Reports and Operations of the STC /
    Contributions from the members
  • 4.1 Crossflow Filtration Practical experiences
in the filtration of colour-rich fruit juices,
    juice pre-treatment and purification (Edgar
    Zimmer)
  • CFF can be recommended for colour-rich products
as the colour is very well preserved, mostly
    better than with classical filtration.
  • Organic and inorganic (ceramic) membranes can be
used. Systems for apple juice filtration are
principally suited also for berry juices. A
pre-treatment by fining is necessary to get
    stable products.
  • In summary, the CFF technology can be recommended
    for the fruit juice industry.

OUTCOMES FROM THE SCIENTIFIC AND TECHNICAL
COMMISSION MEETING
17
OUTCOMES FROM THE SCIENTIFIC AND TECHNICAL
COMMISSION MEETING
  • Sorbitol can be changed by climate conditions,
like water stress and high temperature
  • High sorbitol concentration alone is no proof for
    adulteration
  • Traditional cider apple varieties behave
    different from table apple varieties

22
Assembly of Delegates- 18th June 2007- The Hague/
Scheveningen
23
OUTCOMES FROM THE COMMISSION ON METHODS OF
ANALYSIS MEETING
  • COMMISSION ON METHODS OF ANALYSIS MEETING
  • 17th June 2007, 1400 pm/1800 pm
  • 9 commission members attended the meeting and
there were two apologies for absence
  • Two guests attended the meeting
  • The attendees were present from 7 countries
  • Austria, France, Germany, Isreal, Italy, USA
    UK

24
OUTCOMES FROM THE COMMISSION ON METHODS OF
ANALYSIS MEETING
  • Colour determination of hazy juices
  • The colour of a juice is an important parameter
    included in contract specifications. However,
    its accurate spectrophotometeric determination
    in hazy products is impossible.
  • A simple method to remove the cloud was
developed and this methodology was assessed in an
    inter-laboratory study by 15 laboratories.
Although the procedure returned the same values
for products before and after the addition of a
haze, there was a large spread in the data. As
the interlaboratory variation was found to be
unacceptable the method protocol will be improved
and a new study initiated in the autumn.

25
OUTCOMES FROM THE COMMISSION ON METHODS OF
ANALYSIS MEETING
  • Tri-stimulus measurement of the colour of cloudy
    juices
  • As spectrophotometric methods can not be used to
assess the colour of cloudy juices, such as
    orange and tomato.
  • A recommendation discussing the determination of
the colour of these types of products has been
prepared. This gives an overview of the
tristimulus colour measurement area and how it
can be applied to juices. This paper is ready
    for publication.

26
OUTCOMES FROM THE COMMISSION ON METHODS OF
ANALYSIS MEETING
  • Measurement of high intensity (artificial)
    sweeteners
  • Although these compounds are not seen in fruit
juices, they are used in low calorie nectars and
    juice drinks.
  • A recommendation covering methods of analysis
for these compounds in fruit juice
    drinks/nectars, i.e. saccahrin, aspartame etc,
are discussed in this document and this is ready
    for publication.

27
OUTCOMES FROM THE COMMISSION ON METHODS OF
ANALYSIS MEETING
  • New topics for investigation (1)
  • An iodine titration is often used to assess the
vitamin C content of products in the factory
    environment. However, no performance criteria
are available for this procedure and an
inter-laboratory will be launched in the autumn.

28
OUTCOMES FROM THE COMMISSION ON METHODS OF
ANALYSIS MEETING
  • New topics for investigation (2)
  • Quantification of low levels of polyols in juices
  • Although we have two methods for moderate levels
of sorbitol, there is a need to do assess levels
of sorbitol in low levels in highly coloured
    juices and other polyols.
  • We have a method for the analysis of these
materials in juices which will be assessed in a
    collaborative trial in the autumn.

29
OUTCOMES FROM THE COMMISSION ON METHODS OF
ANALYSIS MEETING
  • New topics for investigation (3)
  • A paper will be prepared on the analysis of the
aroma compounds in juices that we be discussed at
    the next commission meeting.
