An Italian Recipe

• SPUMETTI (Chocolate-Hazelnut Meringues)
• 1 lb. hazelnut meats, coarsely chopped1 lb.
  confectioner's sugar1 oz. cocoa (2tbls.)2 tsps.
  cinnamon5-6 egg whites
• Preheat oven to 325 F. Cut baking pan liner paper
  or brown paper to fit 2 baking sheets and grease
  lightly. Put hazelnuts, confectioner's sugar,
  cocoa, and cinnamon in a large bowl add egg
  whites and mix well until mixture is well
  blended--about 5 minutes. Wet hands with water
  and break off small pieces of mixture (about 1
  tbl.) and shape into round balls. Place on baking
  sheets, 1 inch apart, and bake for approximately
  30 minutes. Makes approx. 3 ½ dozen.

  Italians believe in Jesus birth. Jesus
  birthday is on December 25th. They believe that
  is the reason to celebrate Christmas.

  house reciting Christmas poems and singing songs.
  In some parts shepherds bring musical
  instruments into the village and play and sing
  Christmas songs.

  house to house dressed as shepherds. They play
  pipes, sing carols and recite Christmas poems.
  They are given money to buy presents.

• A strict feast is observed for 24 hours before
  Christmas Eve, and is followed by a celebration
  meal. A light Milanese cake called panetoni
  features chocolate.
