- At conrad jupiters they have a chef college.
- Its unlike Red River because it is a 4 year
program, only running 1 day a week. - On the other 4 days of your work week you are
placed in different culinary outlets in the
casino for 1,2 or 3 month sections. - After your 4 years of college you are technically
qualified to be a commis chef. - You are also paid to be in college and are paid
while you are in college.
6My Responsibilities
- I worked in several different restaurants in the
casino and my responsibilities varied. - Charters Towers
- I would on the cold larder being responsible for
all cold appetizers, salads and desserts. - Spinners
- I was required to learn all stations
- Broiler, cold line, pizza, pans, woks and plate
up - Food Fantasy
- I was responisble for replacing items on the
buffet and carving meat.

casinos restaurant. - I had the opputunity to work in the largest
production kitchen in Australia.

8Charters Towers Andiamo
Charters Towers is a fine dining outlet featuring
Australia Cuisine. It shares a kitchen with
Andiamo, a Mediterranean restaurant
9SpinnersFood Fantasy
Spinners restaurant is the Busiest restaurant on
the Gold Coast. It serves anywhere from 1100- to
1700 people a day. Food fantasy is a buffet
restaurant, serving anything from Thai, Indian to
Irish and classic Australia.
10Zen BiteThe Prince Albert
Zen is a independently owned Chinese restaurant
located in the casino. Bite is located directly
on the casino floor and serves easy to eat
food. The Prince Albert is an English pub serving
pub food and has a great uni night every
Tuesday.
11The Production Kitchen
The Productions kitchen has 5 outlets. Vegtable
shop, Butcher Shop, Fish Shop, Garde Manger and
Cook/Chill.
12Production Kitchen Continued
- Each outlet recieves unprocessed product and
processes it to suit the internal orders from
each restaurant. - Ex. The vegetable shop shaved 4 kgs of red onion
for Spinners restaurant a day. - The Production kitchen also supplies the other
casinos and Gold Coast Convention and Exhibition
centre with pastries sauces soups, sandwiches'
and much more making it the biggest production
kitchen in Australia.
13Conclusion
- I learned so much working in such a huge
establishment. I dont know if I would ever work
in a hotel casino again but I have walked away
with more experience and more contacts then I had
before.
