The BISTRO POS Overview .
The BISTRO POS offers many benefits to the staff
and management of a Food Beverage operation
with staff tracking, menu management and
reporting, as well as inventory control with
reorder features. It features table reservation,
accounts receivable management, as well as fast
food takeout functions. Additionally, it
provides a link to InnKeeper guest rooms and
folios. You can verify guest rooms and post
dining lounge charges directly to their rooms!

The configuration shown in the previous slide
reflects a configuration which can work in
properties where the front desk is the cashier
station for the Food Beverage operations as
well. The front desk staff handle all payments
from the dining and lounge patrons with all cash
drawer and credit card transactions performed
through InnKeeper. Charges to guest rooms or
special event folios are also handled here.

The configuration shown in the next slide
reflects a configuration where the FB
supervisors and staff perform all sales, cash
drawer, credit card, and all FB management with
stations in the Bar, Dining Room, as well as
stations at the front desk for takeout order
management and Gift Shop. Dining, takeout, gift
shop, and lounge charges to guest room folios are
posted to guest and special event accounts from
the BISTRO system to the InnKeeper system using
the CAPA/BISTRO interface.

Operational scenarios .
  • The Newfoundland Labrador models where the
    front desk is the hostess, and the cashier
    station, for the Bar and Restaurant facilities.
  • The Bar and Restaurants operate using cash
    drawers for all servers, but the front desk
    reconciles all FB transactions.

The Stand alone Restaurant and Bar operations
where the only involvement for the front desk is
accepting and reconciling charges posted to rooms
and direct bill accounts.

The Printing Philosophies
The BISTRO POS
  • Each BISTRO station can print to multiple serial
    and/or parallel printers.
  • Dining Room and Catering stations usually only
    print guest checks, with all orders routed
    through the server, or the station that is acting
    as the particular print server for a remote
    printer, as setup in the configuration.
  • The Bar station typically prints guest checks, as
    well as the BAR orders from all other stations.
    One or two printers can be installed based on
    business demands.
  • The Kitchen printer features an auto cutter and
    accepts food orders from all stations. More than
    one kitchen printer can be accommodated if you
    desire orders sent to different tasks in the
    kitchen.

The BISTRO POS setup .
The BISTRO POS is relatively easy to setup. We
use two different approaches based on whether you
will be using standard keyboards, or if
programmed keyboards/panels will be used. A
greater flexibility is possible when you use the
pre-programmed keyboards or when CEDEQ touch
panels are implemented with the install.

The BISTRO POS system can be setup with
  • A floating SKU/PLU system where you have the menu
    item organize themselves alphabetically with
    renumbering occurring any time the menu is
    changed.
  • Easier to maintain, but impossible to have
    permanent SKU/PLU IDs,.
  • A fixed SKU/PLU configuration where you can
    organize all your inventory by pre-established
    SKU/PLU schemes that enable you to work with
    fixed SKU/PLU numbers.
  • It is more difficult to set up and maintain.

network, or PC, and the dongle installation, is
critical to being allowed access to this setup
area!

Setting up BISTRO ..
The configuration of the BISTRO menus, modifiers,
taxes applied, as well as the staff access levels
are accomplished in this menu
Configuration of the Taxes, Departments, and
Sales Groups, in BISTRO are important firsts
prior to setting up the menu and modifiers. You
can setup the pre-assignment of SKU ranges from
5000 to 9999, or use floating SKUs which will
change every time you add or delete menu items.
You also setup the employee access, as well as
their printer options, through this menu. How you
setup printers on the system will be critical to
ensuring that all necessary staff functions work
properly. Test each employee after setup.
This LIB setup menu also enables you to setup
any accounts receivable accounts you authorize
for billing, all payment types accepted, the link
to InnKeeper Room Billing, as well as your repeat
Delivery Customers .

Configuration of the receipt slips, room number
and guest info, and any advertisement are
accomplished here. The way you want your
establishments name/address and guest name/CC
info write in space needs to be spaced and tested
in a trial and error approach.
This SET UP COMPANY menu enables you to setup
the establishment name/address to be printed out,
as well as the guest signature and room number
and guest name for room charging desires.

The BISTRO REPORTS menu
The LIST function provides you with all
categories to print.
You should print out all of your setup prior to
proceeding with operations. Verify all of your
setup and keep the final printout of your
configuration with your master manual.

BISTRO will always be ready to operate when POS
station is up and running. If your BISTRO station
is installed on a WINDOWS PC, always check your
TASKBAR to see if BISTRO is minimized before
restarting BISTRO. If it was shut down, to start
BISTRO up again, all you will need to do is
double click on the BISTRO icon to get it running.
To shut down BISTRO at the end of a operational
day, use Alt F3 to access the shut down menu.

BISTRO provides complete access to menu and
modifier items, as well starting, maintaining and
closing tables. Splitting, transferring, and
monitoring tables is built into the system
through easy to use menus. The system is capable
of maintaining an accounts receivable system, as
well as exporting to a room .

BISTRO operates very effectively on a DOS PC or a
DOS Client where only BISTRO can be operated. In
this mode, you will just type BISTRO or select
BISTRO from a special menu to start up the POS
Station. Rebooting will result in the system
restarting itself.

BISTRO provides a moving menu, which in this
example is driven by a hot key letter, and
presents the corresponding menu section when a
letter is pressed. Select the menu item by moving
the cursor to the item, or enter the SKU to enter.
If a modifier is associated with the menu item
you selected, BISTRO then prompts for the
assigned modifiers. These modifiers are printed
on working printouts and kitchen printouts.

The BISTRO MENU options
BISTRO provides options to enter multiple items
when modifiers are not involved, as well as the
options to correct an menu item order. In this
example you can correct /OOPS the last entry
directly because you have not yet printed the
order. If the menu item was printed and sent to
the kitchen, then the system will force a print
out of the item deletion.

The F7 key presents the single item price when
you have multiple items
The payment option will be available anytime you
have completed ordering and want to finalize the
table , or the option to pay will be presented
anytime a table has been printed and all orders
have been sent to the kitchen

The payment process will step through the
finalization, including tip/gratuity entry for CC
and Room Charges, or will calculate cash
totals/change.
Selection of the InnKeeper payment option will
automatically link the system to the entered room
number and provide folio options
The cancellation of a payment process will alert
the user that the table was not paid/finalized.

The BISTRO MENU REPORT options
The CLERK CASH OUT is available for each employee
at any time through the ALT F4 selection. This
function prints all transactions for that
employee as well as an alert, and print out, if
tables are still open
The REPORT section provides managers with the
capability to report all sales, sales by
employee, or a summary of sales for any previous
day or for the current day.
We recommend using a dot matrix IBM compatible
printer for these reports rather than using a 4
receipt printer. Laser printers with IBM pro
printer drivers, such as the Okidata models can
be supported.

all area of your dining and lounge operations
from inventory, taxes, menu sales, to employee
activities.
The system also provides complete inventory
management, including reorder reports.

printer drivers, such as the Okidata models can
be supported.

A CEDEQ keypad can be implemented to provide
direct access to all of your menu items. Pressing
any menu button presents the options and
modifiers related to that menu item. This CEDEQ
panel replaces the keyboard for the associated PC.

The BISTRO mouse driven MENU KEYBOARD system
provides complete management and functional use
of the BISTRO 2000 system with just your
mouse. Access all menu functions with your mouse,
laptop mouse pad, or an ELO touch screen. The
MACROS for keystrokes are all established using
the CAPA KEYBOARD ini file that enables you to
program/customize the boxes for your restaurant,
bar, gift shop, or for any retail operation .
Once installed it provides simultaneous operation
with or without the physical keyboard hardware
installed.
