3If you have found a coffee that you love, be it a
coffee roaster or a coffee brand thats
absolutely great. But, when it comes to coffee,
there is a part of job about trying the
diversified forms such as ones manufactured at
Evoragreens. Except for the one flavor, that you
are already in love with there is so so much more
to be tried and explored. But for this you dont
have to gamble, experiment with some variant that
you initially buy thinking its good and then end
up hating it for its flavor.

4Golden rule of buying coffee- The rule 1 with
buying coffee is the same universally and its
buying coffee fresh. Now, how would you define
fresh here? We all know that coffee lasts a
very long time however it is not at its best.
Coffee after roasting declines in a pretty steady
way over time for it loses its aromatics. They
kind of float off into atmosphere and escape and
it also develops some unpleasant flavors. They go
stale and begin to oxidize. A combination of
these things is what happens when coffee stales
and goes off.

5Typically, coffee is dated in two different ways.
A specialty coffee will offer you a roast date,
the date on which it was roasted which is
obviously great. However, if a coffee is coming
to you from a super market, they dont want you
to put a roast date. They go with best before
dates which can be 12, 14, and 18 and sometimes
even 24 months after the roasting date. So, in
this way you dont really get to know when the
coffee was roasted. So, where you buy it from
defines how fresh it is.

6Note- Fresher is not always better when it comes
to espresso, as there is a lot of CO2 in the
fresh coffee beans and when its brewed as
espresso, a lot of gas comes out in the
pressurized environment and hence it can disrupt
brewing. Its harder to brew very fresh coffee
and hence some people tend to rest it for few
days. This is only applicable to espresso. With
filter and other types of coffee, its less of a
concern. Resting it for a day two is absolutely
fine. Always choose whole bean coffee over
ground coffee because its better value for money.
Whole beans as compared to ground coffee lasts
longer when grinded just before using them.
