Omar Casali has been named as one of Italys most
inventive new chefs. Having learned the
beginnings of his craft in his nonnas kitchen
the heart of any Italian home he has honed his
expertise at some of Italys top restaurants,
including Mare Cesenatico and as Head Chef at Le
Giare. Uniquely innovative yet with a deep love
of and respect for traditional methods.
3Fresh pasta is all about a return to basics
- Process is everything. Many of our sumptuous
fillings need two or even three or more stages of
cooking, caramelising, resting, steeping, to
bring out their optimum flavours.
4EGG FLOUR / UOVA e FARINA
- Rich organic eggs and high grade 00 flour
soft, fine-sieved durum wheat described in
Italian as tender are all we need to make our
pasta. We work it thoroughly, on the premises,
until smooth and silken, fine and light enough to
fill.
5Only then are they ready to fill our fresh pasta,
to be served to you straight away. We give it
time, so you dont have to.
Fresh pasta should keep in the fridge up to two
days or up to one month in the freezer.
