3Ingredients
- 1 LB beef top round or venison.
- 1 cup sweet cherries.
- 2 tbsp. granulated sugar.
- 1 tsp. lemon juice.
- ¼ tsp. almond extract.
- ¼ cup cold water.
- ¼ tsp. curing salt (optional).
4Instructions
- Start by trimming all the visible fat from the
beef jerky and place it in the freezer for around
an hour or two so that it can freeze perfectly. - Combine cherries, lemon juice, sugar, almond
extract, and cold water in a blender and blend. - Remove meat from the freezer and slice 1/4th
strips with the grain. - For an easier chew, cut against the grain. If
sliced with the grain, you can tenderize with a
meat mallet for a softer chew.
5Combine sliced beef to the batter in a ziplock
bag or bowl and marinate for around 24 hours.
Keep it in the refrigerator. After marinating the
meat, remove it from the refrigerator and strain
excess marinade. You can use a paper towel to
pat dry the strips. The beef jerky is finished
when it bends and cracks but doesnt break in
