1. Rava Dosha
  • A south Indian and easy to cook recipe for your
    breakfast.
  • Ingredients -
  • 1 cup Rava (semolina), 1 cup Rice Flour, 1/2 cup
    Maida, 2 3/4 cup Water, 1/4 cup buttermilk, 1
    Green Chili chopped, 1/4 tsp Black Pepper, 4-5
    Curry Leaves, 2 tbsp Oil, Chopped Coriander
    Leaves, Salt to Taste

Steps --
  1. Mix rava in 1/4 cup buttermilk 1 cup water and
    leave it for 15-30 minutes.
  2. In a bowl, mix rice flour, maida black
    pepper,salt, ginger,chopped curry leaves and rava
    mixture.
  3. Add water little by little and stir continuously
    so that no lump is formed.
  4. Wipe dry and heat the non stick tawa well and
    reduce the flame to medium.
  5. Spread the dosa like a normal dosa with the help
    of the ladle. Pour 2-3 tsp of oil/ghee on the
    corners and over the dosa.
  6. Turn the dosa once it gets cooked from one side.
  7. Serve the dosa with sambhar/coconut chutney.

2. Malabar Paratha
  • Popularly callled as Parota, it is an origin of
    street food in Kerala enjoyed with a
    complimenting Malabar chicken curry.
  • Ingredients -
  • 3 cups Flour (maida), 1 cup Water, 2 tbsp Oil, 1
    tsp Salt, 1 tsp Sugar, 1 tsp Baking powder, Oil
    (for frying)

Steps --
  1. Combing flour, baking powder, sugar and salt in a
    bowl.
  2. Add oil and blend well with the flour mixture.
  3. Now add water, little at a time and knead well to
    make a dough.
  4. Transfer the dough to a well floured surface and
    knead for 5 mins.
  5. Coat the dough with oil, cover with a damp cloth
    and let it rest for 30 mins.
  6. Knead for 5 more mins. Divide the dough into 10
    parts and make balls.
  7. Cover and leave for 15 mins.
  8. Take one ball and roll it very thin. Hold the
    rolled dough from the top on both sides and pleat
    them till the bottom.
  9. Roll them like a spiral and press the last edge
    onto the center of the roll. Repeat with other
    balls.
  10. Heat oil in a tawa over medium heat. Place the
    rolled out paratha and cool for 2 mins.
  11. Cook on both sides and remove from heat. Repeat
    with the remaining batches.
  12. Serve hot with famous Malabar chicken.

3. Wheat flour Dosa
  • Crispy Instant Dosa with wheat flour and veggies,
    a healthy recipe for kids too
  • Ingredients -
  • 1 cup wheat flour, Chopped onion, Chopped
    Capsicum, green chillies, Grated carrot, Salt, 2
    tablespoon sour curd, 1 tablespoon Oil for
    shallow frying

Steps --
  1. Take wheat in large bowl
  2. Add curd and water little by little and mix until
    a smooth batter is prepared
  3. Add finely chopped veggies and salt to taste
  4. Keep the batter to rest for 2-3 mins.
  5. Meanwhile, heat a non stick tawa over medium
    flame.
  6. Drizzle 1/2 oil on area and pour the batter over
    tawa.
  7. Cook it until it turns light brown on another
    side and flip the dosa
  8. Serve it hot with red sauce or any chutney

4. Set Dosa
  • Set dosa is a soft spongy dosa made with rice,
    daal and poha.
  • Ingredients -
  • Raw Rice - 3 cups, Poha/aval/pressed rice - 3/4
    cup, Urad daal/white lentil - 1/4 cup, Sabudana
    /sago pearls - 1.5 tbsp, Fenugreek
    seeds/methidana - 1 tsp, Yogurt/curd - 3/4 cup,
    Water approx 1.5 cup, Soda bi carb - 1/2 tsp,
    Salt to taste

Steps --
  1. Wash rice urad daal well. In a bowl mix rice,
    urad daal, methi dana, poha soak in enough
    water for approx 5-6 hours. Mix together
    yogurt/curd and water and make buttermilk. (can
    use laban instead).
  2. Drain water from the soaked daal rice mixture and
    then grind the soaked ingredients with yogurt
    mixture(buttermilk) to make a smooth
    batter(pouring consistency)
  3. Add salt and soda bi carb in the mixture and mix
    well. Cover and let it ferment overnight or for
    approx 8 hours. Heat a heavy cast iron or flat
    nonstick griddle/tawa.
  4. Wipe it with a cloth dipped in little water and
    few drops of oil. Now pour 2 ladles of batter on
    the hot tawa. Let it spread by itself like a
    thick pancake,no need to spread with the ladle.
  5. Let it cook on medium heat then drizzle some oil
    on it and on the sides and let it cook for around
    1.5 to 2 minute.
  6. Then turn the side and cook it just for a minute,
    no need to cook further. Serve hot with tomato
    chutney,coconut chutney rasam.

5. Moong Dal Dosa
  • Simple and healthy crepes or dosas made from
    moong dal soaked overnight.
  • Ingredients -
  • Moong dal - 3/4 cup washed soaked over night and
    drained, Rice flour - 2 heaped tbsp or more as
    required, Green chili - 1 roughly chopped, Onion
    - 1/2 medium sliced, Salt to taste, Water - as
    required, Ghee / Coconut oil - as required

Steps --
  1. Grind/blend together the drained moong dal, salt,
    onion and green chili with just couple of
    teaspoons of water. Pulse it a couple of times.
    The mixture should not be very smooth but bit
    coarse.
  2. Transfer this mixture into a mixing bowl and stir
    in the rice flour. Add few more teaspoons of
    water (if required) to make a batter of dropping
    consistency.
  3. Heat a non stick pan and grease it with some
    ghee. Add a small ladle of the batter at the
    centre of the pan and smear it gently but
    quickly, moving your hand in concentric circles,
    to make a dosa. Being gentle and swift is very
    important.
  4. Drizzle some coconut oil all over the dosa and
    allow it to cook till it turns golden brown
    underneath. Then gently flip it over and let it
    cook few more minutes. You will see golden spots
    appearing which means it is cooked.
  5. Roll it over or fold it over to make a half moon
    and serve immediately with fresh coconut chutney
    of your choice.
