  • Gujiya recipe

What it takes
  • 2 cups maida flour
  • 3 tablespoons Ghee
  • A pinch of salt
  • Oil to deep fry
  • For Sugar Syrup
  • 1 cup sugar
  • 1.25 cup water

For the filling
  • 2.5 cups grated and lightly fried unsweetened
    mava (also known as Khoya)
  • 4 tea spoons grated dry coconut
  • About 15 cashew nuts (finely chopped)
  • About 15 almonds (finely chopped)
  • 1.5 tea spoon cardamom powder
  • 1.5 cup sugar powder

  • Mix the maida, ghee and salt in a vessel and
    create a consistency similar to a bread crumb
    feel.

  • The dough needs to be made stiff and kneaded
    after adding cold water. After the dough is
    kneaded, it should be covered with a moist cloth
    and set aside.

  • The filling then needs to be created by mixing
    mava, chasews, almonds, coconut powder, cardamom
    powder and sugar powder. The ingredients need to
    be thoroughly mixed for an even taste to be
    achieved.

  • While on one side the oil for deep frying should
    be set for heating, small balls of the dough
    should be made and flattened to prepare for the
    covering of the gujiyas.

  • The filling should then be filled in the
    flattened balls of dough and it should be folded
    in a moon like shape. The same should be repeated
    for all the dough balls and the entire filling.

  • The sugar syrup should then be created to a
    consistency of 3 threads or a slightly thick.

  • The raw gujiyas should then be deep fried until a
    golden brown color is achieved. The fried gujiyas
    should then be put into the ready hot sugar syrup.

  • The gujiyas should be removed from the syrup
    within a very short time however, it must be made
    sure that no side is left uncoated with syrup.

  • When the gujiya recipe is followed well and it is
    stored in an air tight container, it remains
    edible for about a month.
