Steps
First of all, wash the prawns thoroughly and
marinate them for 20 minutes with salt, Shaoxiang
wine, white pepper, corn flour and egg
white. Heat a wok on high flame and put some
cooking oil into it by pouring and then swirling
it around. Reduce the flame to medium. Add all
the prawns into the wok and stir-fry the mix for
a few seconds. Take out the prawns and drain out
most of the oil but keeping a little. Now make
the flame high again and add chopped spring
onion, ginger, dried red chilli and garlic into
the work and stir fry all the items till the oil
becomes rich red in color and becomes deliciously
aromatic.

Now is the time to add soy sauce, sugar,
ZhenJiang vinegar and chicken stock. Now pour
the fried prawns back into the wok and stir fry
the entire content for few more seconds. Mix some
more corn flour with water and add into the

thickened. Now add cashew nuts and sprinkle
sesame oil. The dish is ready for serving. This

Cooking Time 1 hour 10 minutes, Total Time 1

deveined) Celery 3 sticks (trim and slice

Shaoxing Rice Wine / Dry sherry 1 to 2 tsp. Soy
sauce (light) 2 tsp. Fish sauce 1 to 2
tsp. Sugar 1 pinch Cashew nuts 100 pc. Corn
flour 1 heaped tsp. (mix it with little cold
water) Sesame oil 1 tsp.

Steps
Prepare the stock Take a wok or saucepan and
put the garlic, ginger, prawn shells and heads,
put some water to cover the entire items and
boil. Once boiling starts, lower the flame and
gently cook over sim flame for about an hour
(10-15 min. is also fine). Sieve the liquid
through a muslin cloth before using discard the
shells and heads and spices.

- On a high flame heat the groundnut oil and add
garlic, ginger and spring onions (all parts) and
cook for a minute or till the garlic gets
softened and ginger becomes aromatic. Now add the
prawns and cook further for a minute, add celery
and ¾ part of chili. - When the prawns start getting pink, add the stock
(4 tablespoons). Season it with salt and pepper.
Now add Shaoxing rice wine, fish sauce and soy
sauce. The savory dish is ready for serving. It
