Resetting iPhone wont lead to any data loss in your iPhone, and you only need to hold the Sleep/Wake button and the Home button at the mean time until you see the Apple logo. After that, you can try to delete music on your iPhone again.

If resetting iPhone doesnt work, you may want to restore iPhone to factory settings for a try. iTunes is necessary when users want to restore iPhone, and it allows you to create an iPhone backup before restoring your iPhone.
