Oyster Mushroom Procedure
  • Substrate Preparation
  • Pleurotis can grow on straw, sawdust, coffee
    grounds
  • Pasteurize the straw (substrate)
  • Put 2 inches of straw into polyethylene bags.
  • Layer with the grain spawn.
  • Let incubate for one week.
  • Cool to encourage fruiting.

4
What is the difference between pasteurization and
sterilization?
  • Pasteurization heats the substrate (straw)
killing competing fungi, nematodes, and insects,
    while leaving beneficial bacteria.
  • Sterilization is to make free from living
microorganisms usually with heat or a chemical
    treatment.

5
Incubation versus Fruiting
  • Incubation of oyster mushrooms takes place at
    25-30 degrees C.
  • Incubation is the growth of the non-reproductive
    structures of the fungi.
  • Fruiting takes place after a cooling treatment
and is the growth of the reproductive structures
    of the mushroom.

6
Why cool the fungi to encourage fruiting?

7
Why cool the fungi to encourage fruiting?
  • In nature mushrooms grow in the wet, cool
weather. To replicate the change in seasons, we
can give the fungi a cold treatment.
