Processed Cheese
  • Check water level in bath. It should be
    relatively full and must be above the water
    outlet
  • Pre-heat bath to 75F (15 min)
  • Weigh out ingredients
  • Cut cheese into chunks

  • Speed Control

  • Manual Scraper
  • Jacketed bowl with water inlet and outlet and
    temperature probe

Assembling Kettle 1
  • Position bowl
  • Turn clockwise to lock in place

Assembling Kettle 2
  • Place cutter assembly over drive and seat

  • Attach temperature probe by screwing on probe

  • Attach heating lines using quick connects. Hot!

  • Place lid on bowl and snap closed

Processor Settings
  • Set speed control to 3 (300 rpm)

  • Set timer to 6 min. Timer will run continuously
    so you may need to keep setting it back

  • Set speed control to 3
  • Turn knob to START and then turn back to Betrieb

  • Blades should be rotating

  • When desired temperature is reached
  • Open lid Add ingredients
  • Secure lid
  • Start chopping

  • Occasionally turn scraper to remove product
    sticking to the sides. Sticking product is more
    likely to burn

  • After adding ingredients, raise bath setting to T

  • Wait for the temperature to return to desired T
  • Start timing (5 min)
  • Return temperature setting to initial value

Prepare Containers
  • Line dish with plastic wrap
  • Allow for excess to completely cover cheese

  • Use manual scraper to avoid build up and burning
    on sides
  • Monitor temperature avoid overheating
  • Pour cheese precisely at end of heating time

Removing Bowl
  • Caution! Bowl is hot!
  • Remove temperature probe connection Hot!
  • Disconnect heating lines Hot
  • Rotate bowl counterclockwise to release

Pour Cheese
  • Pour cheese into mold
  • Cover with wrap to exclude moisture loss
  • Seal lid
  • Refrigerate overnight (at least)

Cleaning Bowl
  • Remove cheese using plastic spatula
  • Add water to bowl
  • Scrape bowl with spatula
  • Scrub (NO ABRASIVES)
  • Rinse and invert to dry
