"Pasta with herbs, delicious sautéed garlic, and
plenty of freshly grated Parmesan cheese. Chop
the garlic so that some is minced and some is
larger pieces. You can substitute 1 tablespoon
Italian seasoning blend for the fresh herbs."
INGREDIENTS 1 (16 ounce) package dry penne pasta
1 medium head garlic, peeled and chopped 1/2
cup olive oil 1 tablespoon chopped fresh basil
1 tablespoon chopped fresh oregano 2
tablespoons chopped fresh parsley 1 tablespoon
crushed red pepper 1 cup grated Parmesan cheese

DIRECTIONS 1. Bring a large pot of lightly salted
water to a boil. Cook pasta in boiling water for
8 to 10 minutes, or until al dente drain. 2.
In a skillet (kastrol, pánvicka), saute garlic in
oil on low heat, just hot enough to make the
garlic sizzle (sycet) about 10 to 15 minutes.
Season with basil, oregano, parsley (petrel),
and crushed red pepper, and remove from heat.
3.In a large bowl, toss (míchat) cooked pasta
with garlic and herb mixture, and let sit for 3
to 5 minutes. Sprinkle with Parmesan, and serve.
17Grilled or Fried Skirt Steak
INGREDIENTS 2 pounds beef skirt steak 2
tablespoons lemon juice 1/3 cup prepared spicy
brown mustard 1 pinch salt and pepper to taste 1
cup blue cheese dressing (optional)
18Grilled or Fried Skirt Steak
DIRECTIONS In a small bowl, stir together the
lemon juice and mustard. Trim away most of the
fat from the steaks, and rub with the mustard
marinade. Place into a re-sealable bag, and
marinate in the refrigerator for at least 1 hour,
and up to 24 hours. Preheat a grill or large
skillet (pánvicka) for medium-high heat. Grill
or fry steaks for about 5 minutes per side, or to
your desired degree of doneness. Remove from the
heat, and let the meat rest for 5 to 10 minutes
to let the juices settle. Cut each steak along
the braun (vlákno masa, zrno) into 3 or 4 pieces.
Serve with blue cheese dressing.
