3History of Low Tea
Low tea all began when the Duchess of Bedford
started to have tea with bread and butter around
mid-afternoon. This is because dinner wasnt
served until around 8 to 9oclock. The duchess
usually found herself hungry around those long
hours before dinner. Soon low tea became a
popular thing for upper class women. It usually
was served with scones with preserves, small
pastries, and sandwiches
4Ye Old Tea Etiquette
- When you are having tea, it is proper to lift the
tea cup and the saucer together. - Also, the tea tray should have a tea pot, a
stand, tea cups, saucers, and some optional
supplies a sugar bowl, and some goodies.

SCONES
8oz ( 225g ) all purpose ( plain) flour and 4
level teaspoons of baking powder1oz ( 25 g )
caster sugar1/2 tsp salt2oz ( 50 g ) unsalted
cold butter1/4 pint ( 150 ml ) buttermilk sift
the flour, baking powder and salt into a bowl
rub in the butter until the mixture resembles
breadcrumbs add the buttermilk and mix together
with a knife into a soft dough roll out dough
until 1/2 inch ( 1 cm ) thick on a floured
surface cut into 2 1/2 inch ( 6.5 cm ) rounds
with a biscuit cutter or glass place on to a
greased baking tray and brush the scones with
buttermilk bake in oven at 450 F ( 230 C/ Gas 8
) for 8-10 minutes until golden brown when
cooled serve with strawberry jam and thick cream,
delicious

Tartelettes aux Fruits
4 oz (110 g ) plain flour2 oz ( 55 g )
unsalted butter2 oz ( 55 g ) caster sugar2 egg
yolks a pinch of salt2- 3 drops vanilla
extract sift the flour and salt on to a board
make a well in the center and add all the
ingredients using your fingertips mix quickly
togetherknead lightly until smooth wrap with
cling film and chill for 1 hour roll out the
pastry, place into greased tartlets tins and
chill again place greaseproof paper on top the
pastry and fill with beans or rice or baking
beads bake for 7 minutes remove the paper and
beans and bake for another 5 minutes until a pale
biscuit color cool on a wire rackFor the
fillingapricots, peaches, plums or gooseberries
need to be poached lightly in a sugary
syrup raspberries, strawberries, blueberries and
redcurrants can be used fresh
