• During my work term I became familiar with the
  sous-vide method of cooking.
• I also encountered the piano top, or cask
  stovetop.

The WOW concept

• Oui bistro is a WOW hospitality concept
  restaurant. It was modeled after classic french
  bistros from the early 1900s or pre-war
  bistros.
• Oui is a traditional bistro with the addition of
  white tablecloth service.

The Kitchen

• The kitchen at Oui is equipped with one dual
  speed convection oven, once c-vac, once Montague
  stove with a six burner range, one piano-top cask
  with a two level refrigeration unit below, a two
  basket deep fryer, mini-freezer, two cold tables
  with fridges below, a salamander, a three bath
  steam table, and up to 4 sous-vide baths at any
  time.
