see what they notice about people eating habits - If you can go visit the site prior to you giving
the lesson so you can take a peek at who you will
be teaching -

27Scenario 1
You are currently working at an inner city
clinic. The majority of the population is
Hispanic, first and second generation. Many of
them speak English but it is very limited. The
clinics director wants to start classes on
general nutrition. You noticed that many of the
men tend to be obese and the women overweight.
The majority of people that come in the clinic
that are Hispanic is female (70/30). The class
can only be 1 hour in length. If the classes is
successful, they will add other nutrition classes
which would increase the nutrition education area
within the clinic. How would you go about
developing a lesson for this population.
28Scenario 2
You are a consultant that works with the Veterans
Hospital. The outpatient dietitian will be out
of town within two week and you have been asked
to cover for her that week on the 12- week Men
and Heart Disease Series. The men in the group
ranges from age 35-80. However, all that are
there have been diagnosed with heart disease. The
group will be socioeconomic and racial/ethnically
mixed with all of them having limited cooking
abilities. There is usually a recipe provided and
cooking demonstration as well as sharing time of
events. Your topic will be on Fiber- the Bodys
Broom You have 1 ½ hours to discuss the topic.

You are working with a group of health
professionals on childhood obesity. The
neighborhood school is having a welcoming fair
for the pre-kindergarten and kindergarten
students and parents. The ages range from 4-6
years. The nutrition group has a table. The
families in the community tend to be working
class with the majority being African-American
and Native-American students (makes up about 60
of the new students). Many of the parents work
and kids tend to go home to a sitter whether it
is a relative or a friend of the family. You will
not have a scheduled time to present information.
How will you get the attention of the parents to
provide nutrition education to the families?
